Wow! Danielle, what captivating decorative usages for seeds! I don't have any seed jewelry but I do have many pieces that I love that were fashioned from shells. This also reminds me of being in summer camp at 8 or 9 and making rings from peach pits. We would carve out the centers with jack-knives (and I still have some tiny scars on my left middle finger) until rounded holes fit our fingers. And then we'd sand the exterior until the pits resembled gorgeous wooden rings.
